Ingredients For Keto Oatmeal
- 1 tbsp chia seeds
- 2 tbsp flaxseed(grounded)
- 1 tbsp Sesame Seeds
- 2 tbsp fresh Mixed Berries
- 1 tbsp shredded desiccated coconut
- 2 tsp monk fruit sweetener
- 1/2 tsp Vanilla extract
- 1/2 cup almond milk
- 1/4 cup coconut milk
Ingredients for Raspberry cheesecake topping
- 2 tbsp fresh raspberries
- 2 tbsp cream cheese
- 1/2 tsp monk fruit sweetener
- 1 tbsp of whipped cream
Instructions to make Gluten-Free Keto Oatmeal.
In a medium-sized mixing bowl, add all dry ingredients and stir all until well-combined. Do not add fresh mixed berries at this step. Keep them aside to use when serving.
Add vanilla extract a Half of almond milk(1/4 of a cup) and 1/4 of coconut milk and stir until get a thick mixture. Keep the other 1/4 of almond milk aside for later use.
Now leave this to chill overnight or at least 45 minutes in a refrigerator before serve.
* Chia seeds take 45 minutes to 60 minutes to swell.

Mash raspberries using a fork
Add mashed Raspberries, cream cheese, monk fruit sweetener, and whipped cream into a mixing bowl.
Mix all well using a hand beater or a fork, until the thicken the mixture.
Take the keto oatmeal out the refrigerator and add the other 1/4 of cup almond milk into it and stir well. Finally, add fresh mixed berries
